In our proposal, the choice is vast and the repertoire of cheeses includes several hundred types that we offer in rotation taking into account seasonality, the appropriate moments of maturation, the availability of small artisan producers and the production trend of the mountain huts.

The choice dictated by great passion is always adequate and balanced for cow, goat and sheep cheeses in their aging nuances.

All our cheeses, which belong to the blue-veined family, deserve a separate chapter, with French, Italian and non-European offerings.

The lion's share certainly goes to Parmigiano Reggiano. Skilfully dissected, we offer different ages reaching up to 60 months with the production of Vacche Rosse, Vacca Bruna, and the very rare Vacche Bianche
